Specialty Grade Coffee

Specialty coffee is graded on a 100-point scale by professional tasters. Coffees scoring 80 points or higher are considered specialty, with the highest scores (90–100) representing exceptional flavor, aroma, and complexity. Lower scores fall into regular or commercial coffee. Factors like acidity, body, sweetness, balance, and defects are all considered.

Specialty Grade Coffee vs. Regular Coffee

Specialty grade coffee is the highest quality coffee available. It’s carefully grown, harvested, and processed to bring out the best flavors in the beans. Specialty coffee is graded on strict standards by professional tasters, including flavor, aroma, acidity, and body. Only the top 10–15% of coffee beans in the world meet this standard.

Regular coffee, on the other hand, often comes from lower-quality beans, may be blended from multiple sources, and is roasted in large quantities. While it’s still drinkable, it usually lacks the complex flavors and consistency that specialty coffee delivers.

In short, specialty grade coffee is all about quality, flavor, and craftsmanship, whereas regular coffee focuses more on mass production and convenience.

Our Favorite Coffee Region

Coffee has always been my favorite drink, but my love for it deepened on a mission trip to Guatemala in 2019. While building houses and stoves and teaching young children about Jesus, we were surrounded by the breathtaking backdrop of two volcanoes. At their foothills, coffee plant and bans were everywhere. The local coffee we tasted there was simply unforgettable, and from that moment on, I’ve been hooked on Guatemalan coffee.

Our favorite single-batch coffee comes from Los Laureles II in Guatemala, cared for by Mario Roberto Sosa, who’s been farming coffee since 1966. Over the decades, Mario and his family have cultivated a variety of beans—Pache, Caturra, Bourbon, Gesha, and more—creating unique flavors that coffee lovers can’t get anywhere else. At 95, Mario is still hands-on, ensuring every harvest meets his exacting standards.
